taquito casserole

put 1 large or 2 small boxes of taquitos in a rectangle baking dish all going the same way.

in a bowl mix up:
1 small container of sour cream
1 can of campbell's cheddar cheese soup
8 ounces of salsa, green or red, your choice
sprinkle with lawry's season salt
mix together and pour over taquitos
make sure they are covered pretty good
if not add a little milk

sprinkle top with:
1 small can black olives
2 chopped green onions
1 small can drained chopped green chilies
cover with shredded colby, cheddar or mexican cheese

cover and bake at 375 for an hour (if taquitos are still frozen, if thawed takes less time)

you can experiment by using different taquitos, the beef, chicken or cheese and using different salsas, green or red or a mexican chili or tamale sauce. also you can adjust the hot/spiciness by the salsa or sauce you choose.

good side dishes:

refried beans
1 can of refried beans
1/2 packet of taco seasoning
1/4 cup sour cream
mix together and put in a baking dish
cover with shredded cheese
nuke it til hot and cheese melted

mexican rice
1 bag of cooked success rice
sprinkle with lawrys season salt
1/2 cup of chunky pace salsa
1/2 to 3/4 cup of cubed up velveeta cheese
mix together and nuke til hot and melted.

this is one of my most requested recipes. just made it for my daughters spanish class for their cinco de mayo party. this is so easy even a yankee can make it <g> my favorite is the chicken taquitos with the verde (green) sauce. she
