Yes vegetarian, it hasn't been easy. We have a bunch of favorites and occasionally I'll add something new I've found. We eat pasta, and rice dishes, homemade pizza and mexican. We are technically Vegan which is non dairy fat free vegetarian. So its a bit harder than just vegetarian cooking. We have been eating this way since January, and we are used to the different flavors of non fat cooking. We decided that giving up meat wasn't such a bad thing, and have been lucky to find some vegie meat replacements that we enjoy.
I think your idea of putting together a recipe book of family recipes is a great idea. Your son will appreciate that as a remembrance of you forever. I was classically trained in College so I am accustomed to having a recipe in front of me but more so as an outline that I enhance as I go. I rarely if ever use a cookbook for meals, its more fun to experiment, and usually that is when you come up with the best dishes.
