tabouleh salad
(or tabouli or as my kids call it...wooly bully salad)
ingredients 1 cup bulgur 1 2/3 cups boiling water 1/3 cup olive oil 1/3 cup lemon juice 1/4 cup red wine vinegar 1 cup chopped green onions 1 cup chopped fresh parsley 1/4 cup chopped fresh mint leaves (2tbs. dried) 3 tomatoes, chopped 1 cucumber - peeled, and chopped 1/2 bell pepper, chopped 3 stalks celery chopped 1 teaspoon salt ground black pepper to taste
directions combine bulgur and boiling water in a large bowl. Cover, and set aside to soak for 1 hour. add oil, lemon juice, vinegar, onions, parsley, mint, tomatoes, peppers, celery, and cucumber; toss to combine. season to taste with salt and black pepper. cover, and refrigerate for at least 1 hour.
