To answer a few other questions...
We basically try to avoid anything that contains fat or cholesterol. We can have skim milk, egg whites, fat free cheese, etc.
There are a few different soy based products that are pretty close to tasting and melting like cheese. My wife can fill you in better than me with the names.
Basically I continue to eat lots of Italian food and Pizza, bean burritos, vegetable soups, rice w/ beans/vegies, an excellent bean/vegie chile, garden burgers, vegie dogs, egg beater omlettes, plain bagles, fat free waffles, phoney baloney sandwiches, pretzels, butterless pop corn, etc.
It's really good. My wife puts a lot of effort into it. I don't think I could have lasted as long on this diet if it wasn't for her. She tries to keep the menu fresh and tries new things on a regular basis. She's great.
Every once in a while we will let ourselves enjoy something with meat, but right now we are in a groove where we don't want to screw up what's working for us. I definitely miss my cheeseburgers but the trade off has been worth it. I sure have a lot more energy now... I can think clearer.
