Your vegie soup sounds familiar. I do the same type of soup. I found a company that makes a vegetable paste that has less sodium and you add teaspoons of it to water to dilute in place of the cube. I also tried a mushroom base soup that was pretty good too. We are having fun with all the vegie substitutes.
The only dairy we eat really is skin milk in coffee or sometimes cereal, but I prefer the soy milk. And Egg beaters occasionally. Otherwise its soy and tofu. I have Aunts and cousins that are macrobiotic. They have given me some good recipes. This way of eating was totally foreign to me. We never ate this way when I was growing up, but I was around people who did.
