carrot cookies 1 Tbsp. shortening 3/4 c. sugar 2 eggs 1 c. mashed carrots or baby food carrots 2c. flour 2 Tbsp. baking powder 1/2 tsp. salt 3/4 c. shredded coconut icing: 1 can of cream cheese frosting mix shortening, sugar, eggs and carrots together. in a separate bowl combine flour, baking powder, salt and coconut. stir dry ingredients into carrot mixture. drop by tablespoon onto greased cookie sheet. bake at 400 degrees for 8-10 minutes. cool then frost with icing. kids of all ages love them. she
