JP,
Texas also has the Piney Woods, which include the Big Thicket. You would like that. There is a town there really named Cut and Shoot. There are rolling hills with oaks, pecans, and an assortment of other trees in Central Texas, and the Hill Country begins just west of Austin, and San Antonio. Going into the panhandle, there is the Llanos Estacado, and some small mountains on the western edge. The west central part is mainly desert, but the Rio Grande valley is where a lot of produce, and citrus fruits, are grown, such as the Texas Ruby Red grapefruit. You can find just about any type of scenery you want if you travel about a bit.
