It's not a waste.
But I kind of agree with you.

She didn't need the 10, 000 francs to change their food- if you recall from the movie she was already making everything very tasty before she won the lottery. The gift of the 10,000 francs was (imo) about the transcendence of certain times, and the aspirations of the artist. It wasn't really a gift, it was for Babette a chance to re-live her art. And her art awakened the passion, and kindness, and spirituality of the diners far more than their religion did. A humanistic message I like a lot.
