Pasta with brie

This is such an easy recipe, and if you like brie its so tasty.

First you skin and cube a wedge of brie cheese. Any kind that you like and up to a pound of it if you like.
Place in a large bowl with some grape tomatoes or thinly sliced plum tomatoes, some fresh basil, some minced garlic, black olives sliced or pitted. Fresh mushrooms, artichoke hearts... Really its anything that you'd like to add. You can keep it simple and only have a few ingredients or make a primevera. The last ingredient is olive oil, a good one. Sprinkle it on, not to saturate but to coat everything in the bowl.

Now take a pound of your favorite pasta, usually something like a pene works great. You want something that will hold the brie. Boil the pasta al dente.
Drain and pour into the bowl of all your ingredients.
The heat of the pasta melts the brie and heats the ingredients up. Serve with some freshly grated parmesan.

This is a great summer pasta when you just don't feel like cooking a big meal, but want something other than barbecue.
