Navajo Tacos
(if you're vegetarian they are just as good without the ground beef)
Ingredients
(8 servings)
4 New Mexican Chiles;Dried red; 1 Small Onion;chopped 2 tb Vegetable Oil 3/4 lb Beef;ground 3 cups Pinto Beans;cooked 8 Indian Fry Bread Cheddar Cheese;Grated; Lettuce;Shredded; Tomato;Chopped;
Saute the onion in the oil until soft, then add the chiles and 3 cups water. Bring to a boil, reduce heat and simmer for 30 minutes. Place the mixture in a blender and puree until smooth. Saute the beef until browned and drain off excess fat. Add the chile sauce and beef to the beans and heat.
To assemble: Place the bean-beef-chile mixture on the fry bread, top with the cheese, lettuce, and tomatoes, and serve.

There are few things as wonderful as Navajo Fry Bread. Drive through the Four Corners area, and the mouth-watering scent of frying bread will drive you crazy. Eat it alone piping hot, spread with honey or jelly, or cover it with great fillings to make a Navajo taco.
3 cups flour 1 1/2 teaspoons baking powder 1/2 teaspoon salt 1 1/3 cup warm water lard or shortening for frying
Mix together flour, baking powder, and salt. Start by adding approximately 1 cup of water, then more to make a soft dough. Knead until smooth. Divide into sixths, then gently stretch with your fingers until thin. Deep fry in sizzling lard until brown on both sides. Drain.
