Took a great bread making class once...NEVER have a failure on homemade bread anymore...

Use TWICE as much yeast as recipe calls for. It won't hurt!! Secret is getting the water temp for the yeast to 115-117 degrees (and adding 1-2 t. sugar to the yeast)...Buy a candy thermometer.

Let yeast and sugar mixture "raise" for about 5-10 minutes till it is about 3 times as much as you started with.

Dump all other dry ingredients into a bowl. Don't worry about scalding milk anymore. Just add yeast mixture to liquid ingredients and mix.

The other secret is kneading. After kneading for about 5 minutes, gather the dough, and slam it a good one once or twice on the cupboard. (Does your heart good, especially if you are miffed about something....however, watch where you are slamming it...it does get flour all over if you slam the dough into the flour....<g>)

...Knead until dough is blistery. Put in bowl and let rise until double or more....Punch. Shape into bread or rolls. Let rise again in warm place till double. Bake...usually most recipes say 350-375 or so.

It's fun, and EASY, and you won't ever have a failure again!! Just the water temp is important, the sugar in the yeast, and the kneading...
