Most of the Web pix I have seen show people using the KitchenAid with a meat grinder and sausage stuffer... you may be in good company.

And if you are looking for a book - The Sausage-Making Cookbook by Predika is great even though it was published in 1983. I guess sausage doesn't change much from year to year???

The beans were FANTASTIC!!! The beans were canned (I usually use dried but I got a late start on the recipe this morning) and I added about a pound of sausage, onion, a teaspoon of liquid smoke to make up for the fact I didn't smoke the sausage longer, a teaspoon of sugar, ground pepper, stock, a bay leaf and about 6 cloves of garlic. I served it over rice with grated onion on top... would have added sour cream on top if we had it. The sausage was sliced in 1 inch pieces... then I quartered it lengthwise. Oh yes, I added a couple of drops of hot sauce when I found it was benign... it cooked all afternoon - about 6-7 hours... had to add more stock after 4 hours.

Yum, yum, yum!!!
