From everyone I have talked to who has made sausages, it is something you get real serious about and do the rest of your life... the risk vs rewards are very low (you eat your mistakes) and it adds an entire dimension to your culinary repertoire. Why?

- there is hardly a soup or stew you make that isn't enhanced by the right sausage. Well except for gazpacho.
- probably half the casseroles you make can be enhanced by the right sausage.
- some of them are pretty darn good by themselves.
- you know what you are using in them.
- you can actually save money since they cost any where from twice to 5 times the price of making them.
