NOTHING could be grosser than the sausage we had in France last fall-- it was served as an appetizer by the chef on the barge and he even came out himself with the tray, saying this was a special treat, a regional classic. He stood there beaming proudly while we tried it, and then proceeded to tell us the ingredients as we bit into it, which forced us to sidle over to the railing and spit it overboard as surreptitiously as possible, though some never made it that far. Thank God for cocktail napkins.
I think it was called andouillette- and is made from tripe, which is a nasty thought to begin with.
