I'd love the rice pudding version too ... you had me hooked with the nutmeg and apricots ! ( I am so not a raisin fan ... I just can not tolerate bread pudding with raisins!!) not that this is on the same level as your healthy version - but I had a great bread pudding last year with croissants.... and they served it with real whipped cream... oooh la la... it was good
