PORK SLICES WITH CHOPPED GARLIC

pork loin - or 1 lb fresh ham ( what we used in the class)

place pork in pan with water, 1 tbsp rice wine, 2 stalks green onion, 3 slices ginger root. Simmer for 30 minutes.

Take pork from pan - cut in paper thin slices bite size pieces.

Sauce:

1 tsp sugar
3 tsps rice wine vinegar
2 tbsp soy sauce
1 tbsp hot pepper oil
3 cloves garlic

Process in food processor or use a little boat mixer. Pour mixture over the pork slices.

I like a more intense flavor , so I usually let mine set for 12 hours or so in a zip lock bag.
