I love Thai peanut sauce! As a matter of fact, I've been on a binge. I made a cold summer salad twice this week with that as the base. I cooked fettucine al dente, tossed it with some sesame oil. Cooked chicken breasts, shredded the meat and tossed it in lots of Thai peanut sauce (I buy mine at Trader Joes but add chili oil and more peanut butter). I put loads of shredded lettuce on the plate, topped by some noodles, the shredded chicken, chopped scallions and cucumber slices.
