Mustard powder is good, I'd forgotten that, and possibly some cornflour for thickening... but (male) student kitchens rarely ran to either <g> (still less sherry).

Also, you need to lightly toast the bread first, but only a very little on the cheese side unless you really enjoy burnt crusts.

The same sauce, with fried mushrooms, also went well as an enhanced macaroni cheese. Another cheap-n-easy meal for those times when the takeaway was shut!
