Hi GaP, Here's something else that can be done with smoked oysters:

Smoked Oyster Spread

8 oz. - Philly Cream Cheese
8 oz. - Smoked Oysters
4 - Green Onions
1/2 tsp - Caraway Seed
1 Tbsp - Fresh Horseradish
1 box - Mini Stoned Wheat Thins

Drain and rinse the Smoked Oysters and transfer to a bowl.
Mix in the Horseradish and Caraway Seed and set aside.
Warm the Cream Cheese to room temp. or remove from foil and microwave for 15 seconds to soften.
Blend in the cream cheese with the other ingredients in the bowl using a large fork.
Slice the Green Onions into fine rings and mix into the spread.
Refrigerate overnight.

Serve on the Stoned Wheat Thins or another suitable cracker.

The Cream cheese helps cut the smoked oyster flavor back a bit. The onions and horseradish add their own character and flavor. The Caraway adds another "deli" sort of flavor to the mix, but needs time to be released, hence the overnight refrigeration.

This is an adaptation of another recipe that I make with smoked salmon. My brother and I have used salmon roe when we have had luck catching them fresh. I've even substituted Braunschweiger for the fish for another great spread. (could it be that anything mixed with cream cheese is pretty good???)
