I have been wondering about your original complaint. Fact is that beers in the USA are designed by accountants and planners rather then folk who appreciate real beer. Lets face it..real beer is an acquired taste. A business focused on near term dollar return does not understand the cause

What has happened is you used to taste real beer. The business guys have decided how can they capture the biggest immediate customer base. They don't want to educate what real beer is. So lets get rid of the bitter hop taste. Then the engineers start tweeking with what is supposed to be the expected result. Always a mess.

In this country an organisation called CAMRA [sp?](campaign for real ale) killed off all the big boys dreams.

Another point. Strong hops mean you need to to use less in the brew (economics). This gives the harsh taste. A real "bitter" hop taste from a less strong hop, but more of it is usually a more refined taste.

I think I can solve your problem. It just needs defining a little -g-

pearly.
