You know that I'm originally from NJ. What you don't know is that I had a summer job several years back working in that very restaurant. Although the clams were consistently fresh, I never had anything in black bean sauce, since there were mice that lived in the ceiling, and often their droppings found there way onto countertops, the floor, etc. If they still have the same chef, well - for a kick, he (we) used to collect the little gifts and throw them into the black bean sauce. Once sauteed, the consistency was hardly distinguishable from black beans. People kept coming back for it, so I guess it was good.
