Onions are good for you, really. The bad after effects you perceive can be overcome by preparing a little ahead of your onion eating adventure, a simple slurry of 1/2 cup of soft Philadelphia cream cheese and a dozen or so cloves of garlic. Peel the garlic and put in a blender with the cream cheese, a 1/4 cup of pineapple juice and 2 heaping tablespoons of chopped anchovies (or an 1/8 cup of anchovy paste). Blend everything on medium speed until smooth. Put the result in a covered glass container and chill in the fridge for 1 to 2 hours.

Get a medium to large size red, white, or yellow (Vidalia is especially sweet) serve whole to be eaten like an apple, with the chilled garlic/cream cheese mixture and your favorite crackers on the side. Serve with your favorite wine and voila', no onion aftertaste.
