sure I will. Good luck by the way because vegetarian is not easy. When you tell people that you are meatless you get a look like "oh your one of those". Family gatherings and such are funny too. But you will see how "clean" you will feel. I feel so clear headed and not weighed down when we eat vegetarian. If we have a regular meal with meat and fat for the next couple of days I feel awful.

I found a new way to cook zucchini.

Zucchini Fritters

one pound of Zucchini (about 2 medium)
1 teaspoon of salt
1 teaspoon of lemon zest or (2 teaspoons of juice)
1 teaspoon of parsley
1 medium glove of garlic, minced
1/4 teaspoon freshly ground black pepper
2 large eggs, beaten (use egg beaters for fat free)
1/2 cup all purpose flour
2 to 4 tablespoons of olive oil (this is for frying use fat free pan to substitute if you want)

Grate the zucchini into a medium bowl. Add salt, lemon, parsley, garlic, pepper, and eggs.
Mix well to combine. Slowly add flour, stirring so no lumps form.
Heat the olive oil up in a large saute pan (or spray with pan)
Carefully drop a small amount of the fritter mix into the pan. (about two tablespoons)
Give each fritter a few inches apart.
Cook until golden, about 2 to 3 minutes.
Place cooked fritters on paper towels to drain fat.

I served these with a light pasta and sauce. But I had a thought they would do to make a substitute for lasagna
noodles in a vegetarian lasagna.
