Depends on my objectives. If I'm using a put for leverage (ie, instead of shorting), I'll actually go ITM by a strike. If I'm using it for insurance (ie, index "crash poots"), I'll go out a whole bunch of strikes. For most things I'll go one or two strikes out, hoping to catch the meat of the move.
