Actually, Mandela's ANC was considered a terrorist organization, because of its violent resistance to occupation. Not unlike the PLO. What Mandela accomplished was catching the sympathy of the world.

Some people considered Mandela a terrorist (though I don't seem to remember any ANC campaign that concentrated on blowing up restaurants and shopping malls a la Fatah and Hamas), but he got his chance to become a legitimate statesman and took it. Arafat got his chance and went back to being a terrorist.

As for responding to Ghandi, first I'll have to find out what he actually said. I've already had too much experience of your short, edited, quotes out of context to believe that they represent the substance of an opinion. You wouldn't have a source for your quote by any chance?
