Old growth as you know it exists because we kept fire out of it for a century or so.
I think you are confusing the fuel buildup from fire suppression with old growth forests. There may be fuel buildup in old growth and there may be fuel buildup in new growth. It's a different issue.
Old growth forest is distinguished by the fact that it is old. It's the age of the trees that sets this ecosystem apart. Trees that are many hundreds, even thousands of years old growing in an among newer trees. The old trees grew up in thick forest and so have the denser wood structure, but they have also been around long enough to be as big as a tree can really get. A rapidly grown tree does not have the strength to attain the size. A forest has to grow thick first and dense later.

I didn't see Fern Gully, but I did read the Lorax.
