I know about gravity. I can choose to not believe in it, albeit at my own risk.

To assume that we have amassed even 5% of all possible knowledge in the universe is extremely arrogant. Thus everybody has a belief system that extends far beyond their realm of knowledge and understanding.

As far as judging truth or falseness, if a belief system (religion or non-religion) claims to be truth, and a single point can be irrefutably shown to be false, then the religion is false.

As long as we all agree to basic laws of logic and reason, it is not hard to discern truth and lie.

A belief system that denies absolute truth lacks both reason and logic.
