No, God did not make a mistake. A common misconception that is frequently held by young Christians is the idea that God's creation of man ended on the "seventh day".
God's creation continues today, and will be completed at the Resurrection from the dead when man receives his spiritual and eternal and resurrected body and perfect soul.

Let me explain! After the creation, man fell through sin. This was part of God's creation. Then we had the purification of the Flood. This was part of God's creation.
Then the Noahic covenant after the flood, then the Abrahamic covenant (the old covenant), then the forgiveness of sin and reconciliation with God the Father through the Cross of Jesus--which is the New Covenant spoken of by Jeremiah, and then the Holy Spirit through faith in Jesus the Messiah Jesus( the last two are as one), and finally the resurrection of the dead with our new eternal spiritual bodies and perfected souls. This, in my understanding, will be the completion of God's creation.

There were no mistakes, only new stages in the process of God's creation!
