No one is claiming that all 6 MM Jewish victims of Germany's shame were gassed and cremated, in the Wannsee conference they debated the methods of extermination, when debating the "Final solution of the Jewish Question", the leading "solution" was evacuate "them" to camps in the east, some would be exterminated outright (later known as the "selection process", the other be organized into "labor battalions ("Arbeit Macht Frei"), making sure that exhaustive work with meager food would ultimately spell death. The principal work of a portion of those would be to "dispose" of those dying first. You are absolutely right, there were more than one way devised to kill a Jew. My own mother was sent in September 1944 from Brussels to Auschwitz, I know for a fact she was not gassed nor cremated, her train never arrived there (yes they did document the shipments arriving), they were, presumably downloaded and shot on the way, but no one knows for sure.
