Execrable comes from a completely different root than excrement and means the meal was really bad, but not THAT bad! The restaurant was arguing that most people would read execrable as meaning excrement.
I think the magazine settled just to avoid going to court by changing the word, though I doubt they changed the meaning of the review.
Maybe the restaurant should have spent their money on a new chef instead of a lawyer.
