Equestrian Jumping must be the most difficult sport.

For pure physical conditioning, as well as team coordination, I'd vote for Crew. I was never in such great shape as when I was rowing. It's a full-body work-out, and the succes of an 8-man shell depends on everyone working in complete harmony. One screw-up by one member of the team on one stroke (usually, "catching a crab") and you're toast.
