Montaigne on wine:

"Delicacy and the curious choice of wines is therein to be avoided. If you found your pleasure upon drinking of the
best, you condemn yourself to the penance of drinking of the worst."

But somewhere, I think, he goes on at greater length about how he does not go looking for rare vintages, but is happy with something that tastes good, that he can enjoy with his meal.

Came across an enormous list of quotations about wine, in French, including Julia Child; I especially liked Sir Alexander Fleming's, "Penicillin cures people; wine makes them happy."
