- its getting to be turkey time again. i've
always had success roasting my turkeys this way:

first of all, i only buy fresh turkeys - not frozen
and if i can afford a "new york hung" one, i'll get
it. they are hard to come by here and expensive -
about 5 bucks a pound.

after stuffing the trussing the bird, i rub it all
over with butter and then sprinkle paprika on it.
place it breast side down on a rack in a roasting
pan.

cover loosely with foil and place in a 325F oven.
after about two hours i 'flip the bird' over and
continue roasting covered.

then, for the last hour, i uncover and baste whenever
i remember to. really easy.

i think the secret to a moist turkey, is a slow
oven and a fresh (as opposed to frozen) bird.

ummmmm good.
