Sensational Double Layer Pumpkin Pie 4 oz. cream cheese, softened 1 TB. milk or half and half 1 TB. sugar 1 1/2 cups thawed cool-whip topping 1 keebler ready crust, graham cracker crust 1 Cup milk or half and half 2 pkgs (4oz.)jello vanilla instant pudding 1 can (16oz.) pumpkin 1/2 tsp. ground cinnamon 1/2 tsp. ground ginger 1/2 tsp. ground cloves mix cream cheese, milk (1TB.) and sugar in a large bowl with a wire whisk until smooth. gently stir in whipped topping. spread on bottom of pie crust. pour 1 cup of milk into a bowl. add pudding mix. beat with a wire whisk until blended, 1 to 2 minutes. mixture will be thick. stir in pumpkin and spices with wire whisk. mix well. spread over cream cheese layer. refridgerate at least 3 hrs. garnish with additional whipped topping. makes 8 servings.
