Rambi, I was surfing some recipe sites yesterday looking for a recipe for a wonderful item I found at Fresh Fields. It was called a Lentil Dal Burger. Don't let the name put you off. It was wonderful. I never did find a recipe, but in the process I came across some other interesting things. As you know, I like really weird food combinations and will generally pick the oddest combination from any menu. Well, yesterday I came across what might be the nastiest looking recipe I've ever seen. I offer it to you gratis. If your kids give you any grief over what you prepare, you can always threaten to make this the next time.
Salad recipe: chickpea liverwurst mango
Serves 4
INGREDIENTS:
1 cup canned chickpeas, drained
½ cup liverwurst, diced
½ cup mangoes, peeled, destoned and cut into thin wedges
3 cups mixed vegetables, defrosted (peas, carrots, corn)
1 cup smooth peanut butter, melted
3 cups yogurt
1 cup cooked fusilli, cooled
1 tbsp. Greek seasoning
lettuce leaves to serve
METHOD: Combine chickpeas, liverwurst, mangoes, peas, carrots, corn, smooth peanut butter, yogurt, fusilli and Greek seasoning. Arrange lettuce leaves on a platter. Spoon pea mixture on top. Serve chilled as a great meatless main course, or as a side dish to barbecued chicken or steak.
