Georgia...Worlds Greatest Stuffing..and Turkey..
Ingredients...

1 cup Golden raisins
1/2 cup Port
1/2 cup brandy
6 ounces of butter
2 cups finely chopped yellow onion
1 cup finely chopped celery
1 cup finely chopped carrot
2 cups chopped red apple with skin on
1 pound spicey sausage diced
1/2 cup chopped parsely
2 cups steamed chestnuts chopped(I buy fresh steam em and shell em)
2 tablespoons freshly chopped rosemary
2 tablespoon freshly chopped sage
1 pound crumbled cornbread
4 eggss beaten to blend
2 cups fresh peaches cut into small cubes

Soak the raisin in the Port and Brandy.then add butter put it into a large saute pan.
add the onions, and saute unitl translucent.
Add celery,carrots, apples and sausage cook for about 10 minutes until somewhat tender.
Transfer to a huge bowl add parsley chestnutssage cornbread eggs salt and pepper to taste.
Add peaches carefully..
Fill it in the turkey breast cavity do not pack tightly as dressing expands.
Place the rest of the stuffing under the neck or bake separatley in a baking dish covered with aluminum foil. for about an hour if you bake separately.
We sometimes brush turkey with a mix of Orange juice and butter..soemtimes just butter
Yummm...
The stuffing from inside the Turkey is unbelieveable.

Tomorrow night Corn/sweet Potato pudding..
