Rich1...I've printed the recipe out and am going to try to twist my wife's arm.

Pioneering on the turkey front also. I've read a few recipes that have you soak the bird in brine water for 12 hours or so. Turkey is roasted in the oven first on both sides and then breast side up. Object of the whole exercise is to come up with white meat (which cooks faster) as moist as the dark.
