Holiday Corn Soufflé

I used 3 cups of frozen whole kernel corn (cobs are optional<g>), boiled in salted water for about 3 minutes to make it tender and then drain it and set it aside.



Chop ½ cup of each of the following and add to the drained corn:

Onion
Green bell Pepper

Add ¼ cup of canned or bottled diced Pimientos. (I discarded the bottle but left the lid.<g>)

Add 1/3 stick of melted butter

Add 1 cup crushed saltines.

Shred and add 1 cup of sharp cheddar cheese to the corn.

Add 2 eggs beaten into a standard can of condensed milk. (my can over-flowed)<g>

½ tsp salt

Freshly ground pepper.

Place in a 13 x 9 x 2 glass dish.

Top this with additional crushed saltines and cheddar cheese and bake at 350 for about 45 minutes.

If it seems set at this point, invite your sister over for dinner and let her taste it first, even better if her hubby is named Mikie. If they both approve of the dish, attempt to sell them the recipe.

[Side note: I will probably substitute spinach or blanched broccoli for the corn.]
