How about veggie kabobs?
Or my fav, grilled zucchini or yellow squash?
Cut the skin off opposite sides of th the squash
then cut into pretty thin slices the long way so
that each slice has skin around the outside, marinate
at least 3 hours than grill for ~4 minutes, turnover
than another 2 or 3 minutes. Marinated tofu and/or tempeh
are also good grilled. Veggie hot dogs and boca burgers
ain't bad either. The veggie hot dogs gotta be steamed or
boiled 1st though and yeah the marinated brussels sprouts
should be great grilled. Grilling was original plan but
I got lazy when I made them. The grilled zucchini can be
a pain as far as sticking to the grill. I place tinfoil
over the grating, yeah it does take a little away from the
flavor but cleanup is so much easier.
