equally likely to be
picky about what they accept or reject of the New Testament, and therefore
are likely to construct their own Jesus, instead of following the actual one.

Show me the actual Jesus. Show me where you find him. The Testaments, written and extensively edited decades after Jesus's death for very specific purposes by people with very significant axes to gring, can hardly be credited as accurate journalistic reportage of the actual Jesus.

Since I know you read Greek as well as I do, we at least have had the chance to read the gospels in is close to the original as the best available sources allow. But most people are yet further removed from the "actual" Jesus by having to read about his life in translation, adding yet another layer of bias in between themselves and the actual Jesus.
