In cajunland, cooking venison is men's work, but I do know that they marinade it first. If you have some acid in the marinade it acts as a tenderizer. I will ask my dad for the recipe - he is a good cook for things like that, and duck, and other game.

One of the best things I've ever eaten was deer heart jambalaya, cooked at Exxon Refinery by whoever killed it. Each unit has its own kitchen and the men all cook. The foreman on my shift always made biscuits. He called them "cat head" biscuits, and he would cook them every shift. When they were ready, he'd pull them out of the oven and say "cat head" and you knew they were ready.

I can't tell you why it was so good. It had a lot of flavor.

I worked at Exxon because the federal government made them hire women, and they were paying $5 an hour in 1973. It was an interesting experience. I worked on Poweformer I and Powerformer II. There was another woman who worked on, I think, the cat cracker (catalytic cracker) and there was one with the electricians and one with the pipefitters. I didn't fit in too good.
