The 25/06 used to be a popular round out West but I think the belted magnums have edged it out.

I used to make round steaks out of the deer's hind legs. Pound in a lot of flour and fry them. The loins and tenderloins I fried in butter and didn't overcook them. The rest of the deer went for salami or was ground and mixed with whole hog pork sausage.

I've read of some recent concerns about deer now having some disease you can get from eating them.
