So the only potential 3G Killer Apps that demand HS data involve more than ears and mouth: they must need use of hands and eyes.

I don't know, what about using the headphone jack to attach a patch to a jogger/walker that measures metabolic rates or whatever it is those body-obsessed people want to track? In an emergency it could be programmed to autodial the nearest hospital, and in its calmest computer voice say, "He's fallen, and he can't get up."
