I don't have an ear recipe, but I have a friend who, when traveling in Mexico, always makes an effort to sample the cockscomb soup, he says the liberal use of jabaneros(sp) peppers makes it quite the gastronomic experience, perhaps I can get the recipe. I think you could probably substitute ear cartilege for cockscomb in a pinch!!
