There are preformed antibodies in humans that bind to the determinant that is "shaped" by this enzyme.

The determinant is expressed on the surface of normal pig cells.

The human antibody "fixes complement" and the "complement" (a cascade of several interacting proteins) pokes holes in pig cells.

Pig to human transplants therefore last for only a couple of minutes.

IMO, there are other hurdles to get past, particularly with vascularized, solid organ transplants. However, I've recently talked to one of the major contributors to the field, and they believed that this was the one and only major issue remaining.
