How would you get the volunteers to be the ones that eat the shitty food, pork riddled with trichinoisis worms, milk with high lead content, beef with mad cow prions, no vitamins or supplements, inferior vegetables, drink the dirty water?

You obviously need a highly motivated volunteer group -g-. Seriously, the doctor who confirmed that Polagra was a disease of malnutrition used a volunteer group of prisoners who took part in the study in exchange for shorter sentences.
