I have a new vegetarian diner entree for you.

Pollenta Mushroom Sandwiches

I buy the polenta that comes refrigerated in a tube. Frieda's makes a good sundried tomato and basil.

Slice the polenta into 1/4 rounds and place on a cookie sheet.
Brush each one with a good olive oil, and bake at 350 for about 15 minutes. You want them firm not brown.
Meanwhile, chop up a pint of mushrooms, mince two cloves of garlic, mince some onion and place in a saute pan with a teaspoon of olive oil. Cook the mushrooms down, you can add a pinch of salt, pepper, oregano, or basil its to your taste.
Then when the polenta is done take out of the oven and spoon some of the mushroom mix onto half of the rounds. Sprinkle a little parmesan cheese on each one. Then taking the other half of the rounds, cover each one. You can top with a thin slice of firm tofu and some more of the mushroom mix. I also laid a thin slice of roasted red bell pepper across the top.
Bake again for another 15 mins or so.
I served with a spinach Nasoya pasta, but a long grain rice is good too.
