I am not deciding this for them, I am only stating it the way I see it and the way it keeps consistency in a hyped and euphemised world.

Without a religious faith, what events in their lives give them an ethnicity? Surely not religious holidays, dress, music, or foods associated with a religious significance?

"They still seem to consider themselves Indian ethnically."

And why not? If they were born in India, they are Indian!
If they were born in America, they are American* and so forth...

*Naturalised citizens are a separate matter....
