What you said here didn't fit my memory of "correct". Really think you should review concept of amino acid(22) completion. It takes both grains & legumes to get there without a source of animal protein. Someone should also mention the fava bean problem specific to some people within this discussion.

Really, if you look at the numbers on the bag side panel of a "whole grain" natural wheat flour Vs. standard white enriched(AP) flour you'll find your body ends(slightly) up better off from the standard cheap white enriched than the natural excepting the effects of the fiber. The real best flour for the body is an "enriched whole wheat" yielding the needed fiber, a far higher protein, + 6% of your riboflavin,6% of iron,10% of folic acid. Problem is it produces a somewhat gritty gravy or sauce & dense / chewy quick breads unless it is power sifted and additional pulverizing / grinding done just prior to use. The dense quick bread (biscuit pancake) problem when using "whole wheat flour" can be somewhat overcome with a lower protein (gluten) southern soft wheat flour but the no matter the level of additional pulverizing & even high speed power sifting the finest sauces will remain elusive.
