my sister and brother-in-law are visiting this
weekend and i thought i'd try this soup:

Mexican Lentil Soup

14 oz (400g) bag red or green lentils
1 large onion
2 red or green peppers
4 carrots
2 celery stalks
3 jalapeno peppers
4 large garlic cloves
1 tbsp olive oil
8 cups chicken or vegetable broth or bouillon
1 tbsp chili power
2 tsp ground cumin
1 tsp dried leaf oregano
1/2 to 1 tsp salt
1 tsp ground black pepper

wash lentils in sieve. finely chop onion. chop red peppers, carrots and celery into 1/ inch pieces. mince jalapenos and garlic.

heat oil in large sauce pan. add onion, and chopped veggies together with garlic and jalapenos. stir fry until vegetables are slightly soft - about 8 minutes. stir in lentils, broth, and spices. bring to a boil stirring often. cover and reduce heat and simmer till tender, about 40 minutes.

sounds good doesn't it?
